Anyway so on Facebook today I saw that Gooseberry Patch was holding a contest to take a picture of you, the GP cookbook and your favorite dish and send it end. Well of course I wanted to enter but the bad thing was that it ends TONIGHT and we are in the middle of a snow storm (like half the country!) so I had to make due with what I had on hand. Luckily I have MANY MANY favorite Gooseberry Patch recipes so I flipped to some of my favorites to see which would work with what I had on hand and ta daaaaaaa....one of my favorites!
For the contest entry my little girl and I decided to make the Yummy Chocolate Crunch that was sent in by Rebecca Santelli of Mechanicsville, VA in the Country Quick and Easy Cookbook. My little girl is home today because like I mentioned ....LOTS OF SNOW...so she is having a snow day!
So, what do I love about this recipe? Well, first of all it is yummy! I always include it when we make goodies for Christmas and it is always a hit. Plus it is super easy, only takes 4 ingredients and doesn't take much time at all!
Here is the recipe (I hope it is okay to post this):
Yummy Chocolate Crunch
1 sleeve saltine crackers
1 c. butter
1c. sugar
12 oz. pkgs chocolate chips
Place crackers, side by side, in a 13"x9" baking dish lined with aluminum foil, until bottom of dish is covered. In a small saucepan, bring sugar and butter to a boil; stir for 3 minutes while boiling. Pour mixture over crackers and spread with spatula until all the crackers are covered. Bake at 350 for 10 to 15 minutes or until edges of crackers are golden brown. Immediately remove from oven, spread chocolate chips over all until melted. Freeze for 2 hours. Break into pieces. Makes 12-14 servings.
I followed the recipe exactly on one side of the pan hahaa but on the other after we spread the chocolate we put some Valentine sprinkles on the top just to jazz it up. We have also added crushed nuts before but really nothing is needed because it is perfect just the way it is.
