Yum-O


Mmmmm....so a few weeks ago I came across a recipe on a message board I read. It sounded good and I had the ingredients so I tried making it the other night. Ummmm ...if you like blueberries this is delish!!!

Hubby and I both give it two thumbs up. It is yummy and easy to make :)

Blueberry Boy Bait

Ingredients:
2 cups flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon salt
2/3 cup butter, softened
1 cup milk
2 eggs
1 tsp almond extract (or vanilla, or lemon, or whatever you prefer)
1 cup fresh or frozen blueberries
1/4 cup sugar
1/2 teaspoon cinnamon

Directions:
Preheat oven to 350 degrees F.

Grease and flour a 9x13-inch pan.

In a large bowl, combine flour, 1 1/2 cups sugar, baking powder, salt,butter, milk, almond extract and eggs.

Blend at low speed till dry ingredients are moistened then on medium speed for 2 minutes.

Pour into prepared pan.

Arrange blueberries evenly on top of batter.

Sprinkle with 1/4 cup sugar and cinnamon.

Bake for 40 to 50 minutes or till cake springs back when touched in the center.

Cut into squares and serve warm with whipped cream or ice-cream.



Now we didn't eat ours with whipped cream or ice cream but I'm sure that would be good and I probably used twice that amount of blueberries. Hubby said might as well use them all :)
